Puff Pastry Purses
30 Minutes Easy

INGREDIENTS:


  • 1 tbsp olive oil
  • 500 g baby spinach leaves
  • 1 onion, finely diced
  • 1 clove garlic, crushed
  • Zest of 1 lemon
  • 2 tbsp chopped fresh flat-leaf parsley
  • 2 tbsp chopped fresh dill
  • 2 tbsp chopped fresh mint
  • 250 g ricotta cheese
  • Fresh nutmeg
  • Salt and pepper
  • 2 sheets ready rolled puff pastry
  • 1 beaten egg, for egg wash

METHOD:


1. Microwave the spinach on 1000 watts for 4 minutes. Place in a colander over the sink and drain out excess liquid

2. Heat the oil in a pan on the Induction Hob and saute the onion and garlic until soft

3. Combine the spinach, herbs, onion, lemon zest and cheese in a bowl. Season with salt, pepper and nutmeg

4. Lightly flour your work surface and roll out each sheet of puff pastry to the thickness of a €2 coin. Cut each sheet into 9 squares

5. Place a spoonful of spinach mixture in the middle of each square

6. Gather together and scrunch the edges of each square so that it looks like a purse

7. Place on the lined oven tray and brush with egg wash

8. Bake for 22 minutes until golden
