Buffalo Wings


INGREDIENTS:
- 12 chicken wings
- 3 ounces unsalted butter
- 1 small clove garlic
- ¼ cup hot sauce
- ½ teaspoon kosher salt
- Celery stalks
- Blue cheese salad dressing
- ½ cup salt
- ½ cup sugar
- ½ gallon water at room temp or just slightly warm
METHOD:
1. In a large bowl or pot gradually add sugar and salt to water. Use a whisk to keep the sugar and salt suspended until it dissolves completely
2. Now add the room temp chicken wings and set aside for 30 minutes
3. Preheat convection oven to 400°F. Arrange wings in a broiling pan in the center rack and bake for 20 minutes. Turn each piece over, and turn the temp to 425°F; continue to bake for another 20 minutes or until the meat is cooked through
4. While the wings are cooking, use the microwave to melt butter in a bowl with the garlic. Combine the butter-garlic mixture with hot sauce and kosher salt in a bowl large enough to hold all the wings
5. Remove chicken from oven and place into the bowl with sauce. Toss to combine
6. Serve immediately with celery and bleu cheese dressing
